The prepared foods that have been available in Lewis Jones Food Market will continue to be available.  You may also look forward to seeing more and more available from our fabulous chef Dexter Reed.  As for me, I will be going on to serve as the Manager of Volunteer Services at Vista Care Hospice.  We appreciate the support you have all given us over the past 2 years. Cook asparagus in lightly salted boiling water over medium heat for 5 minutes, or until tender.  Drain and plunge into cold water, then drain again and set aside.&lt;br /&gt;2. Cut the melon in half and scoop put the seeds.  Cut into small wedges and cut away the rind.  Separate the prosciutto slices, cut in half, and wrap around the melon wedges.&lt;br /&gt;3. Arrange the salad greens on a large serving platter and place the melon wedges on top together with the asparagus spears.&lt;br /&gt;4. Scatter over the raspberries and Parmesan shavings.&lt;br /&gt;5. Place the vinegars and juice in a screw top bottle and shake until blended.  Pour over the salad and serve.&lt;br /&gt;&lt;br /&gt;COLORFUL KEBABS&lt;br /&gt;9 OZ FIRM TOFU, PORK, CHICKEN OR BEEF&lt;br /&gt;2 SMALL ZUCCHINIS, CUT INTO 8 PIECES EACH&lt;br /&gt;2 MEDIUM RED ONIONS, PEELED AND CUT INTO 8 WEDGES&lt;br /&gt;1 MEDIUM RED PEPPER, DE-SEEDED AND CUT INTO 16 CHUNKS&lt;br /&gt;&lt;br /&gt;MARINADE:&lt;br /&gt;2 TBS OLIVE OIL&lt;br /&gt;1 TBS SOY SAUCE&lt;br /&gt;3 TBS BLACK BEAN SAUCE&lt;br /&gt;1 TBS CLEAR HONEY&lt;br /&gt;2 CLOVES GARLIC, CRUSHED&lt;br /&gt;SALT &amp; PEPPER&lt;br /&gt;&lt;br /&gt;METHOD:&lt;br /&gt;1. Pat the tofu or meat dry with a paper towel and then cut it into 16 cubes.  Put the cubes into a dish with the zucchini, onions and red pepper.&lt;br /&gt;2. Mix the ingredients for the marinade in a large dish.  Use a spoon to coat the tofu or meat and vegetables in marinade.  Put in the fridge for at least an hour.&lt;br /&gt;3. Pre-heat the grill to medium high.  Thread pieces of red pepper, tofu or meat, red onion and zucchini onto a skewer.  Repeat and then make 7 more kebabs.&lt;br /&gt;4. Place kebabs on the grill broiler and brush with the marinade. Our July schedule is a little light due to so many being out of town or otherwise busy enjoying a well deserved summer-time break. Heat and stir until sugar is dissolved.  Cool slightly and stir in watermelon juice, with alcohol and additional water.  Pour into 2 quart pan and place in freezer.  When partially frozen, start scraping ice with a fork to “fluff”.  Continue to scrape periodically until serving time.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Marinade for Flank Steak&lt;br /&gt;&lt;br /&gt;½ Cup lime juice&lt;br /&gt;¼ Cup lemon juice&lt;br /&gt;½ Cup honey&lt;br /&gt;1 tsp. salt&lt;br /&gt;½ tsp. cumin&lt;br /&gt;½ tsp. ancho or chipotle chile powder&lt;br /&gt;&lt;br /&gt;Mix together all ingredients in a zip-top bag.  Add flank steak and refrigerate overnight.  Turn bag occasionally.  Discard marinade after removing steak to cook/grill.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cilantro Sauce&lt;br /&gt;&lt;br /&gt;2 Cups loosely packed cilantro leaves&lt;br /&gt;½ Cup chicken broth&lt;br /&gt;2 T chopped green onions&lt;br /&gt;1 T chopped ginger&lt;br /&gt;½ tsp. salt&lt;br /&gt;1 chopped, peeled garlic clove&lt;br /&gt;Additional chicken broth to thin sauce&lt;br /&gt;&lt;br /&gt;Place all ingredients in a food processor.  Process until smooth.  Add additional broth to achieve desired consistency.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Jicama Slaw&lt;br /&gt;&lt;br /&gt;1 bag pre-shredded slaw mix&lt;br /&gt;1 Cup jicama, peeled and shredded&lt;br /&gt;3 T fresh lime juice&lt;br /&gt;Salt and pepper to taste&lt;br /&gt;&lt;br /&gt;Toss all ingredients together.  Refrigerate until needed (up to several hours).&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Arepas&lt;br /&gt;&lt;br /&gt;4 ears of fresh corn, shucked  &lt;br /&gt;1 Cup masarepa&lt;br /&gt;4 oz. goat cheese, crumbled&lt;br /&gt;½ stick (2 oz) butter&lt;br /&gt;1 Tbsp. light brown sugar&lt;br /&gt;Salt, to taste&lt;br /&gt;¼ Cup green onion, chopped&lt;br /&gt;¼ Cup cilantro, chopped&lt;br /&gt;2 Tbsp. canned green chiles, chopped&lt;br /&gt;&lt;br /&gt;Preheat oven to 400 degrees.  Cut kernels from cob into a bowl so all juices can be saved.  Set aside.&lt;br /&gt;Put cornmeal in a large bowl with cheese.  Put milk in a small saucepan over medium-low heat until steam rises, then add butter, brown sugar, and salt; stir until melted.  Remove from heat and stir into cornmeal mixture until a thick batter is formed.  Fold in the corn kernels, green onion, cilantro, and chiles.&lt;br /&gt;Gently form 3 - 4 inch balls and flatten with palm of hand to a ½ inch disk or less.&lt;br /&gt;Cook arepas on a griddle until golden brown, flip and cook other side.  Place in oven to finish cooking.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Tomato Water&lt;br /&gt;&lt;br /&gt;8 medium/large ripe tomatoes&lt;br /&gt;Core and quarter tomatoes.  Puree fully in food processor.  Line a sieve/colander with 2-3 layers of cheesecloth and place over a container to collect liquid.  Put tomato pulp in lined sieve -- do not press on pulp. A substitute may be sent in your place for any class that you will be unable to attend. Classes need a minimum of 15 students to occur. Please bring your receipt with you to the class. For enrollments made online, confirmation will be provided by email only. Confirmations for enrollments made by telephone will be provided upon your request.&lt;br /&gt;&lt;br /&gt;&lt;span style="FONT-WEIGHT: bold"&gt;WAITLISTS&lt;/span&gt;&lt;br /&gt;When a class is sold-out, we will gladly add your name to a waitlist upon request. If an opening becomes available, waitlisted persons will be contacted by phone in order of their waitlisted date. You will have 3 hours to confirm your enrollment with payment or the open seat will be offered to the next person on the waitlist. When you enter the waitlist, please provide alternate contact numbers such as your cell phone number.&lt;br /&gt;&lt;br /&gt;&lt;span style="FONT-WEIGHT: bold"&gt;DEMONSTRATION CLASSES&lt;/span&gt;&lt;br /&gt;In our demonstration classes, students learn by watching the instructor prepare the menu while providing step-by-step procedures for each dish. This relaxed, interactive format encourages informative discussions to help you prepare the dishes with confidence at home.&lt;br /&gt;• Comfortable seating is provided.&lt;br /&gt;• Personal recipes packets are provided for students to take home.&lt;br /&gt;• Tastings of the dishes prepared are provided along with a beverage.&lt;br /&gt;&lt;span style="FONT-WEIGHT: bold"&gt;&lt;br /&gt;HANDS ON CLASSES&lt;/span&gt;&lt;br /&gt;In our hands on classes, students will be involved with the instructor as they prepare the menu and receive step-by-step procedures for each dish. Discussions are still encouraged but this format will offer a more hands on approach to your learning experience. Recipes and tastings will also be made available for this format.&lt;br /&gt;&lt;span style="FONT-WEIGHT: bold"&gt;&lt;br /&gt;IN-HOME CLASSES&lt;/span&gt;&lt;br /&gt;Designed just to fit your needs whether you are a novice or a more experienced cook. We will come into your home, bringing either one of our chefs or an instructor to offer step-by-step, hands on instruction. Prices begin as low as $25 per person, per hour, plus food cost.
